I have bell peppers that I want to use up for a dairy supper. Anything I can make except sliced, roasted peppers or a veg salad?

You can make a pasta with roasted peppers, stuff them with a mixture of beans or fake meat, corn, a grain like couscous or quinoa and top with cheese. I make quesadillas with peppers as a filling.

Mix rice or quinoa with salsa and black beans. Stuff peppers. Top with cheese and roast.

My kids love this: fry pepper strips with or without other veggies, add pasta sauce to the frying pan, then mix into cooked spaghetti.
