I once read a story about an Australian pastor converting to Judaism and then becoming a Rabbi. I think he had a family. Do you have the link to the story written about them?

A little googling is turning up Ole Brunell who's Swedish but lived in Australia and acted as pastor.

There is the story of Larry Trapp who was a prominent member of the KKK who at the end of his life converted Judaism.

I'm Australian and know someone who was a pastor and converted to Judaism. We work in the same school. He and his family are originally African and they are dark-skinned, does that info ring any bells? Curious as to why you are asking? He is one of the nicest people I know

Are you maybe thinking of a novel by Ruthie Pearlman (though that pastor might have been in South Africa, I'm not sure)?

It sounds so so familiar, I'm almost positive I remember the story. Was it in mishpacha maybe? A lifelines or true account

Australian I think, Caucasian, I don't think it was Gavriel Aryeh Sanders, and it wasn't the person in the mishpacha article. It was a true story, not a novel.

He's actually American. Just lived in Germany for a few years. He was studying to become a minister, I don't think he actually became one.
