Does anyone know if there are kosher upscale restaurants that are healthy in the tri-state area?

Whats your definition of healthy? Low carb? Low calorie? Vegetarian? Gluten free? Grain free? No sugar or preservatives?

You can go into almost any good restaurant where they have good ingredients and someone who cooks food and order a healthy delicious meal.

You just need to tell the waiter exactly how you want the food prepared.

Very easy

Order fish grilled plain without oil.

Order salad without dressing. Have the dressing on the side. I actually used to bring salad dressing if I remembered along with me. Or I would make my own at the table with balsamic vinegar, some Sweet n Low and some garlic powder. Or use the dressing from the restaurant and dip the fork into the dressing and then pick up some of the salad - that way you use a small amount of dressing but still get flavor.

Get veggies steamed plain and then flavor with lemon juice; sprinkle with balsamic vinegar

Restaurant food is pretty universally high in fat because fat makes food taste good to most people. The calorie count for a portion of restaurant food tends to be extremely high - you can look up calorie counts for various restaurants like Cheeseake Factory to get an idea - I realize that Cheesecake Factory isn't kosher but you can get some idea of what comparable foods would be..

Of course if depends on what your situation is. If you are eating out once in a while, eat what you want. Or eat small portions. But otherwise, you have to take control of how the food is served
