Extra shredded cabbage

What can I do with extra Cole slaw mix? We eat Cole slaw every shabbos but don’t need a whole bag worth. I either make half a bag and the rest stays in the fridge till I throw it out. Or I make a whole bag and throw out the extra Cole slaw when it’s time to make the new batch.
Any ideas what I can do with half a bag of shredded cabbage & carrots?

I make a nish-nosh salad that has lettuce, cabbage, cucumbers, tomatoes, and scalliions, nish-nosh-dressing, and crackers on top.

Sometimes for a weekday supper I just throw together the salad minus the crackers. some of my kids actually prefer it that way.

Or I use a different dressing, for a change....

Egg rolls! Sauté the veggies with onions and add cut up pieces of deli pastrami. Fill wrappers and fry 😋

Saute the cabbage with brown sugar and salt until very soft.

Then mix with cooked noodles (bow tie or medium) for Luckshen n Kraut (Noodles and Cabbage)

Yum!

You can also freeze the sauted cabbage in a baggie until you make the cabbage n noodles.

PS you can just freeze the plain cabbage until you want to use it in a recipe.

Freeze the cabbage and after you have 4 1/2 bags make unstuffed stuffed cabbage.
(Sauté onions and garlic, brown meat, add canned diced tomatoes, a drop of sugar or sweetener to balance the acid in the tomatoes, shredded cabbage on top and simmer until yummy)

Cabbage Tomato Soup - tastes like stuffed cabbage without the meatball.

shredded cabbage

tomato sauce

water

brown sugar

squirt ketchup

onion powder or sauted onion or frozen onion

Cook until cabbage is soft, about 1 - 1.5 hours. Yummy!

Actually making this for dinner tonight (pastrami egg rolls w/ egg drop soup)!

Although we don't bother cooking up the veggies-- we just marinate it with a little soy sauce, ginger, and brown sugar and then fill the wrappers and fry/bake

Unstuffed cabbage in crock pot!
Layer tomato sauce, onions, meatballs, and cabbage. Squirt of ketchup on top. Let it cook about 4-5 hours on high, or whatever setting your crockpot has.
