Paleo cholent?

My husband just started a paleo diet and I need ideas for how to make his favorite food - cholent -without beans, barley or potatoes! Any tried and true recipes would be greatly appreciated!

I sometimes make a delicious slow-cooker stew with beef, carrots, zucchini, onions, and garlic. I'll serve it for shabbos lunch when we want something rich and warming but not too heavy. Season with salt, pepper, paprika, and garlic. I won't pretend it's a cholent, but it's hot and hearty and savoury so it ticks many of the same boxes.

I'm not really a recipe cook... I do just treat it like a cholent in that I prep the desired amount of beef/vegetables, put into the crockpot, salt and season generously and then cover with water. I put it on high until just before shabbos and then switch to low.

I don't know Paleo, but I make SCD cholent, with navy beans, green lentils, butternut squash, and meat, season with salt, pepper, garlic powder, and paprika. It's really good.

I used to slice up several onions and put in crock pot with fresh garlic and ginger and flanken and then season as usual and add water or broth. I'd make rice separately in a rice cooker for the rest of the family to enjoy with the meat and onions.
