I'm in this cycle where I spend Sunday - Tuesday getting into a proper state of ketosis (I use the test strips so I know where I'm at) - Wed, Thurs, and Friday are great, and then I ruin it all with Challah on Shabbos. I can't stop at one slice, and then I just devour carbs.
How do you do keto on Shabbos?!?

Many women I know don't wash on Shabbos. Don't know if each of them asked a rov about this but I did and was told - because my need to lose weight was a medical issue, not a matter of a few pesky and unsightly pounds - that I could absolutely skip washing for bread on Shabbos.
If that is not an option, other options: Buy or make the tiniest rolls possible so there is no extra for you to eat. Buy the worst tasting challah that you have no desire to binge on.

My DH, the Keto King and a great cook, makes these low carb rolls:
2 3/4 C water
3 C carbalose
3/4 C fine bran
3/4 C oat fiber
1 T sugar (for yeast)
3 T Lakunto
1 T molasses
2 t salt
4 T gluten
2 T olive oil
2 t yeast
Make in bread machine, or as you'd make challah, proofing yeast, adding everything except flour substitutes, mixing, then adding flour substitutes, bake in muffin tins at 350 for about 45 minutes.

Eat the minimum amount of challah needed to bench. Make sure to have delicious other foods that you look forward to.

Probably 7 or 8
He slices each small roll into 4 or so slices.
