Carrots:
Olive oil
Honey
I usually put in soy sauce so I'll improvise with some salt to make it KLP
Garlic and pepper
(can sprinkle with parsley before serving)
For zucchini lasagna, I'll google a recipe (here's one I just found- I always take the base of recipe and make it my own)
https://www.notenoughcinnamon......free/
Zucchini Kugel- (I don't have exact measurements!)
Shred zucchini and onion, sautee, add in egg, potato starch, salt, pepper, garlic and bake.
I'll find the recipe for the kugel and cabbage later!
Enjoy

You slice the cabbage, or you buy shredded?
How exactly do you make unstuffed cabbage?

Line pot with shredded cabbage. Lay little meat logs on top (use mashed potatoes as filler instead of rice). Pour sauce over it all. Bake or cook as you would stuffed cabbage.

I’ve never made stuffed cabbage!! What liquid do you bake/cook it in? I’d rather cook in a pot than bake in the oven....

lots of roasted vegetables as side dishes. Sweet potatoes, beets, potatoes, zuccini, butternut squash, carrot. (we only eat peeled). so easy, fresh and colorful. You can also roast "peeled" brussels sprouts, red onion and butternut squash together--great combo. The sprouts are a bit of a pain, checking and peeling, though. I also make cubed zuccinni with onion, sauteed, then add tomato sauce (homemade or canned), and let it cook for a while until it's really soft and yummy. we only use salt and sugar for seasoning.

Any good meatball sauce that you like. I like seasoned tomato sauce and apricot preserves mixed together for unstuffed cabbage.
Use thinner sauce for oven, like tomato juice. Thicker sauce for crockpot, like marinara.

Buy something special that you wouldn't normally like pesach croutons, boxed GF kneidlach or make zucchini noodles and chicken matzah balls.
