My Shabbos meals are heavy on challah, dips, carbs and protein.
I need lots of salads, that are not full of oil, mayo or sugar. Thanks!

Roast a bunch of colorful vegetables on a cookie sheet with a bit of olive oil, at 400 for 20 minutes. Season very well with salt until very flavorful. Add a splash of balsamic vinegar if you'd like.
Buy a bag of shredded carrots. Season with lemon juice, olive oil, kosher salt, fresh garlic, dried dill and scallions.
Israeli salad with mint and parsley.
Tomato salad with red onion, red vinegar, olive oil, salt and pepper, and a touch of garlic.
Zucchini spaghetti salad with onion, garlic, mushrooms and tomatoes

Beet salad with balsamic dressing
Hearts of palm salad
Classic lettuce salad with diversified toppings, I.e., salted roasted cashews.
Spinach salad with mango, strawberry, and red onion. Dress with agave, oil, vinegar, salt and pepper.

Japanese eggplant
I slice hassleback style and put a slice of garlic in between slices drizzle olive oil and sprinkle with kosher salt
Bake 450 for 30-40 minutes, every oven is different check for doneness
I like to serve this with a drizzle of Tehina
Heart of Palm salad
Slice heart of Palm in rounds(I buy sliced) and quarters
Cube avocado, I try to get the same size
Baby tomato cut in 4, I like to use yellow if I find
Salt and lemon
Red cabbage shredded
Sprinkle cabbage with kosher salt and massage until it starts to soften a bit
Add a generous amount of pomogranite seeds
Dress with a mix of equal parts olive oil and balsamic vinegar, shake in a container before pouring it over the red cabbage
Serve in a platter or bowl and sprinkle edges with slivered almonds
Shred lettuce (or buy it shredded already)
Add lots and lots of celery, sliced
Dress right before serving with oil and fresh lemon juice
Mix in walnuts
Low carb taboulli
I use hemp seeds instead of bulgar or you can use quinoa as well
Dice tomato, cucumber, a little red onion (optional) lots of parsley and mint chopped.
Mix
Dress with olive oil , salt, and a bit of fresh lemon juice
