I know we don’t use sesame on Pesach, but it’s mostly the takeout-food store-bought sauce on this chicken that my kids like.
Is there a Pesach recipe for something similar?
Can be Gebroks.

there is a duck sauce recipe in Passover Made Easy. by leah schapira and victoria dwek. check on kosher.com if u don't have the recipe book

Make a slurry batter and fry chicken cutlets cut into nugget sized pieces.
You can use the crispy finger recipe here as a base.

Combine 3/4 cup each ketchup, brown sugar and water in a saucepan with 1 crushed garlic. Once it started to bubble around the sides, pour over fried chicken.
Or use the tangy sauce with limited ingredients.

Is tapioca starch or arrowroot powder klp? I use it as a gf alternative for corn starch. It thickens the sauce.

Let me see if I can find my mom's slurry.
Btw I think I linked the wrong batter for chicken, above. This is the one I meant to post.
Batter Fried Chicken Strips
2 tsp oil
1 tsp paprika
1 tsp salt
1 tsp garlic powder
1/4 tsp black pepper
2 eggs
1/2 tsp baking powder
1/2 cup water
1 3/4 cup potato starch
1 1/2 - 2 lbs. chicken cutlets, cut into 1" strips
oil, for frying
Combine oil, paprika, salt, garlic, pepper, and eggs. Add baking powder, potato starch, and water. Mix until batter is smooth and thick. Add chicken strips and toss to coat.
Heat oil in saucepan over medium-high heat. Deep fry chicken strips until golden brown and crispy. Place on papertowels to absorb excess oil and ensure that chicken remains crispy.
