Some kid-friendly recipes for kids who don't like potatoes?
My kids have gotten SOO picky I have some who literally eat plain matza and vegetables the whole yom tov
My husband was doing Keto up until now, he acknowledges that pesach will be near impossible, so wants to go light on the carbs.
We do eat gebrokts, but given the above, not crucial.
I have an air-fryer this yom tov making it fleishig.
Some ingredients I have plenty of: frozen butternut squash, riced cauliflour, chicken cutlets, frozen broccoli.

Roasted veggies from ur frozen veggies
Kugels out of some of the frozen veggies- (salt/pepper/eggs/small amount mayo/spoon of potato starch)
Baked shnitzel or just spices and bake the chicken
Chicken roll ups- can make a stuffing with the riced cauliflower

Homemade kishka or stuffed chicken.
Matzah popover rolls (my kids love this with cream cheese and pickles).
Butternut squash fries.
3 color veggie fries.
Zucchini noodles and chicken matzah balls.
Matzah balls.
Pesach croutons (bought).
Bissli (with matzah meal).
Cauliflower or butternut squash "potato" salad.
Quinoa avocado salad.
Hot dogs on skewers.
Cubed smoked turkey breast.
Egg frittata.

Do they like sweet potatoes? If so, you can make mashed sweet potatoes or use slices as a "crust" for veggie kugels etc.
Other ideas:
butternut squash quiche
Mushroom and leek soup
Eggplant roll ups (with ground chicken or meat inside)
Broccoli kugel
Pineapple chicken
