Does anyone have the recipe for the cucumber salad with a twist from the bais Yaakov cookbook (with red onions, peppers, and dill)? I don't have my cookbook on me and want to make it for y"t. If someone could post a picture or type out the dressing ingredients I'd really appreciate it.

1/2 cup white vinegar
1/2 cup sugar
1/4 cup oil
4 teaspoons water
1 teaspoon salt
4 sprigs chopped dill
4 cucumbers
1 red pepper
1 red onion
I agree, it's delicious!

Would this last 8 days in the fridge? Does it get too strong?

I wouldn't eat a salad that was 8 days old. Most salads get a little mushy after a couple of days. Salads tend to taste better when the vegetables are fresh and crisp.

I think she means to marinate the cucumbers in a dressing (which improves over time), not to make an actual salad
