What can I do with Beets?

I got a package of beets in a pesach box and I would like to do something interesting with them.
I already have chrein in the brand that my Dh is particular about, so that's out.
I also can't find a recipe without vinegar, onion or garlic (those 3 ingredients are no-nos).

Any ideas?

I have a few beets, mainly bought only for one dd because she's the only one here who likes them...I'm also looking for something easy to do with them.

Add them to a salad with roasted veggies. Yum.
Dress with oil, lemon, wine and salt and whatever else you like. Yummmm

If they’re raw- cube along with parsnip, carrots, sweet potato... and roast with whatever spices/condiments you like and can use. A little maple syrup and cinnamon is yum.

For salads just slice or cube and you can add chopped parsley, squeeze some fresh lemon and olive oil, s&p.

Beet chips
Spiralize & dress up salmon plates/salads/meats
Borscht/soup/use cooked beet juice if no time to make it really fermented

Roast, peel and cube, and dress then in lemon, olive oil and salt.

Slice very finely, brush with olive oil and sprinkle with salt. Roast until crispy. Eat as chips or serve over salad.

Last year I found a recipe for beet salad with horseradish, parsley and salt cheese. It was perfect for Pesach, and the flavours went well together. I'll post the recipe when I find it.

Simple is best: boil, slice.
If they need taste, add sugar and lemon

Add to chicken soup for the prettiest deep golden coloring....
( don’t worry when cooled it gets redder, but when warm it’s beautiful
)

I make a beet marinated salad that way, by marinating in sugar and lemon juice etc.

My mother made a delicious hot beet-potato salad. She added cubed sour pickles and mixed in mayonnaise. You can add in anything else you would normally put into a potato salad. But don't leave out the pickles. They give it that extra crunch.

Beet Salad

If raw, cook whole unpeeled beets till pierces easily with knife - about 3 - 4 hours.

rinse with cold water, peel. cut into thin slices or small cubes

Slice an onion thinly and separate rings

fill a container half way with water. Add 2 spoons of sugar. Stir. Add 2 spoons of vinegar.
Add 1/2 tsp. salt. Taste to adjust seasoning.

Add 1/2 the onions to the container, then all the beets, top with rest of onions.

If using canned beets you can skip the first step of cooking.

Similar I think. In Israel it's just sold as גבינה מלוחה.

I found the recipe, but there aren't any specific quantities.

Grated raw beets
Grated fresh horseradish
Parsley
Lemon juice
Drip of honey
Crumbled salt cheese

Toss all the ingredients together. It makes a good meal in itself, or you can leave out the cheese and serve it as side dish at a fleishic meal. (If you do that, you might want to add a bit of salt.)
