I baked, froze and defrosted a couple of cakes. But now that we want to eat them, they are not baked through.
Anyway to safe those cakes?
Can I bake them again?

It's most likely not going to work unfortunately.

What do you have to lose? I would totally defrost the cakes and then bake additional time. It might work. Please post what the results are. Good luck.

I would cut off the parts that are cooked through and make trifle or truffles.

I agree as there is no way you can bake the cake again and eat it as a "cake". You might bake the uncooked portions and use them for cake pops. Depending on the age of your children making cake pops could be fun if you have them decorate them.

I once made a Bundt cake for a dinner where I had promised dessert. Naturally it fell apart completely and out of desperation I made trifle. What was ironic was that I was so pressed for time that I used Cool Whip type of whipped cream and boxed pudding mix - and the trifle was a huge hit. Much bigger hit than the Bundt cake would have been. No one suspected that it was made from a failed cake plus artificial type of ingredients. LOL

Update.
Nope didn't work out. Went in the bin.
Did a new cake and tried out the advice I was given by a 90 year old lady.
The only way she found her pessach cake would come out well was on 120 for 80min.
Will see if that helps.

Are these cakes made by separating egg whites and yolks? Are you baking them in a small convection oven?
