Here’s what I have but I’m hoping for more ideas-

Potato kugel
Apple kugel
Pineapple kugel
Broccoli kugel - need a good pesach recipe

Lettuce salad with homemade garlic mayo dressing

Roasted vegetables instead of vegetable kugels (that goes better by my family)

Is your quinoa sushi salad just regular recipe with quinoa instead of sushi rice?
Do you have KFP kani? Or just vegetables?
Sounds like a great idea!

I make most of my regular salads as all year round.
Mandarin orange, craisins, toasted almonds with romaine
Portobello mushrooms, cherry tomato and romaine
We also do a make your own salad bar at most meals.

Apple salad with nut crunch & kiwi dressing instead of strawberry sauce if you use only peeled veg
Coleslaw from shredded kolrahbi if you use only peeled
Beet salad
Cucumber salad
Lettuce salad with pieces of avocado inside
Grilled chicken salad like ceasar salad or like tropical could add fruit like mango/oranges/pom with orange juice dressing
Cubed salmon on top of lettuce, green apples, red onion, pom with lemony dressing/ceasar dressing
Salad topped with roasted carrot or sweet potato chips

Fresh fruit salad
Apple salad of random colored apples
Cucumber salad
Green salad (lettuce, spinach leaves, cucumbers, granny Smith apples and avocado)

Shepard pie
Sweet potato kugel
Pineapple pie (I think it qualifies as a kugel?)
