I use a very simple sponge, chiffon..with snow.. and not too sweet.. I usually split it into 2 loaf pans (the deep kind)
The almond flour and chocolate chips in above post sounds yum, but too heavy to make French toast with.

Same thing she eats for breakfast year round- yogurt or matza and cream cheese (or both)

I found last year a good banana pancake recipe with bananas, eggs and potato flour. I lost it so kind of winged it this year and they seem to work well and everyone is gobbling them up:
4 eggs, 4 mashed bananas, 1/2 cup milk (or water) mixed with potato starch. (or more...not sure exact quantities) Mix and fry. You can make a soft cheese filling or sprinkle with sugar, or add choc chips to the batter. My son likes this with no bananas at all so play around with the recipe. (if you get it perfect post it here)
You can also make this with no processed ingredients at all:
2 large or 3 small bananas
4 eggs
