The polite thing is to individually handwrite the cards. Someone went to the trouble of buying a gift. Yes, it's hard right after a baby. Don't torture yourself to write a perfect note.
Just:
Dear Mr. and Mrs. Giftgiver, thanks so much for the lovely thingamajig. We can't wait for the little one to wear/use it. Sincerely,

Had our 3rd baby in November and wrote down all the people and what they gave us. Athough I didn't get around to individually writing the thank you cards until a week before Pesach I got texts and calls thanking me for writing them. For our first child we printed a collage of pics of our child and us and wrote a generic thank you which people did like and hung on their fridges but I'd agree that if people took the time to get you something including gift bag and all they deserve personal recognition/appreciation.
