Oh also at the end of pesach I pour all the leftover sugar water over the remaining nuts and bake it in the oven till it gets hard. It turns into thin pieces of candy that my kids can't get enough of.

We bread schnitzel with almonds, burgers with salt egg and potato.
I mixed homemade mayo with sauteed onions and used as a dip for fish.
salmon baked with mayo and loads of sauteed onions.
chicken with wine, lemon juice, orange juice sugar
Veg latkes
Kugel
Delicious fried potatoes with onion

Many ppl don’t eat vegetables with small seeds were the seeds look like rice (zucchini, peppers, cucumber, eggplant, etc)

(Chop mango, red onion, jalapeno into small pieces. Season with lemon, oil and salt)

Babaganoush
(Roast peeled eggplants in foil over fire, add homemade mayo, lemon, salt, and optional jalapeno)

One recipe almost everyone can make is colorful fries- you fry potatoes, carrots, and beets separately and serve mixed together. You can also add other vegetables.

My grandfather grew up in Yerushalmi, and had this minhag.

We also don't use anything not peelable, and no bought products or spices. I use liquid sugar, salt and olive oil. This year my son grew herbs which we used, and we made homemade onion powder.

Biggest hits:
Candied pineapple - cook pineapple cubes in Iiquid sugar until caramelised.

Fried chicken patties instead of 'matza balls' - mince chicken, onion, salt and homegrown parsley (tho I would do without if needed) and fry small patties.

Chicken in the airfryer: skinned, olive oil blended with herbs.
Carrot chips, parsnip chips and beet chips with just olive oil, salt and homemade onion powder, in the airfryer.

Chicken with lots of fried onions, red wine and homemade tomato sauce.

French fries once as a treat for the kids.

Compote: peeled chopped apples, pears and pineapple, and cooked until soft.

My family was not hungry and still feels fondly for Pesach bh.

It is 1000% about the attitude and you will not be starving.
I probably use less things than you and we had a gorgeous yom tov we were so proud of and were so full after meals.
This is what I had in my house
Carp slices
Carp gefilte
Chicken soup made of knob celery, parsnip and optional carrots
Pesach Egg noodles
Apple compote
Flanken made with salt, sugar, onions
Minute steak
Swiss steak
Meat stew with potatoes
Chicken stew with potatoes
Chicken bottoms
Cubes potatoes
Hash browns
Pan fried potato kugel
apple tart
Potato latkes
Fresh orange juice
Fresh grape fruit juice
Fresh lemon juice for lemonade
Cucumber salad

I dont use any spices besides salt and sugar and dont use most vegetables and the only snacks I bought for my kids were lady fingers ans pototo chips and everyone was perfectly ok.

I’m not really sure what she’s saying. What does “nothing” mean? Even if the only things you eat are grape juice, matzah, and meat, you can still have a recipe that tells you how long to sear the meat and at what temperature. And I don’t think op uses “nothing” on Pesach. Even if she uses only a few vegetables, there’s an endless number of ways you can prepare them. Granted you would need to make schmaltz first. But that comes with the territory.

Pesach is expensive and perhaps OP cannot afford expensive fish and meats.

We do use olive oil nowadays (used to just use shmaltz) but otherwise don't use much either. However we do use pre-boiled sugar on Pesach, but DH doesn't use it so I don't put it in everything.

I made mini potato kugels and mini sweet potato "pies" (no crust) that were delicious. French fries and scrambled eggs in shmaltz are heavenly.

Shepherds pie can be made with just ground meat, potatoes, eggs and salt (that's what I do) and it's yum.

In general, I find that coming with an attitude of "here's the ingredients I have, what can I do with them?" is much easier than coming with an attitude of "here's what I wish I could eat, how can I do that when I don't have/use ____?"

Fried onions add great flavor to everything. I use onions, salt, and red wine as flavoring for pretty much everything.

If you share your ingredients list, I can make you some sample menus so that you can enjoy next Pesach (in Yerushalayim!).

My in-laws use:
potatoes
eggs
onions
carrots
knob celery
parsnip
beets
apples
oranges
grapefruits
grape juice
walnuts/filberts/almonds
potato starch
sugar
salt
oil
chicken


My FIL was matir neder for coffee and milk so now MIL uses coffee in her cake recipes. She serves an extensive delicious menu consisting of these products.



But there's no fish, no meat, no vegetables. After being there for two days, we are all constipated beyond.
