We don't grind coffee beans but maybe we should try it. Giving up coffee is hard for us.
Buy a coffee grinder.
And for meat you need a meat grinder.
It’s much easier when you have the right tools.

It's delicious baked. Just toss with a bit of shmaltz.
Cut all into fries. Toss parsnip (or potato) and sweet potato with a tablespoon of fat and roast in one even layer on a cookie sheet - 400 for 40 minutes. Toss the beet fry shapes with half a tablespoon fat on a separate cookie sheet and bake on the other shelf in the oven - for about 6 more minutes (46 minutes total).
Toss all 3 colors together with salt and serve.

This is also really heaven. And absolutely stunning. I brought it with me when I was a guest at family that uses minimal ingredients (since I'm family they surprisingly allow me to bring food that they know I was careful with for them. Smile ) I only flavored it with grated onion and/or shallots and salt.

Butternut squash or kohlrabi latkes are delicious. 4 cups finely grated vegetables, 1 small grated onion, 3 lightly beaten eggs and 3/4 tsp salt (or more to taste). Fry in fat.

Saute'd zucchini with eggs
Carrot chips
Saute'ed sweet carrots with pineapple
Saute'ed chicken cubes with carrot & zucchini
Baked apple with nuts/sugar or plain peeled or topped with sugat cinnamon
Apple kugel ( cube the apples instead of slicing when skipping the starch
Spaghetti squash kugel
Eggplant babaganush purple onion instead of garlic
Avocado n egg salad
Layered potato & egg bake
Mashed potates combined with mashed eggs
Shepherds pie
Liver blintz
Stack sauteed cubed chicken with purple onion topped with cubed avocado
Lukshen kugel from egg crepes. You can also mix in grated apples
Lukshen kraut from egg crepes & saute'ed kohlrabi
Kolrahbi fries
Roasted sliced green & yellow squash
Grilled chicken salad
browned ground meat with onions, eat with matzah or in egg crepe, you can fry egg crepe for cigars
egg kichel bake squares if egg crepes
fruit salad with oj dressing or blended kiwi sauce

Not having read everything...

DH would like to use almost nothing. Oil, potato starch, sugar & cocoa. DS says he'd like to trade potato starch for chocolate bars. (And I keep telling him honey is less processed than sugar, but he still doesn't want to eat it. After years of suffering as I have my own digestive restrictions, I decided I am eating things he doesn't eat. It's not like it's even his minhag! He just adopted it.)

So here's what I did.

Bought greenhouse parsley & dill. A lot. Ground in food processor & froze in a container.

Cut up small pieces of red pepper (BH we eat things without peeling, though I guess you could?) Put in slow oven for several hours until crisp. Ground in food processor. Paprika!

Grind whole peppers in a pepper grinder.

Maybe tomorrow I will post my striped salmon with a different spice on each stripe!

(DS actually bought raw coffee beans & figured how to roast them on a punctured cookie sheet, then ground them!)

Cole slaw from kohlrabi
Beet salad
Horseradish dip- mix marror with homemade mayo
Fried cutlets coated with shredded potatoes or sweet potatoes or kugel batter
Fried cutlets coated with diced onions
Baked salmon topped with a salsa of cubes of mango/pineapple & pom seeds
Cubed salmon over salad
Latkes from cooked or raw potatoes
3 layer sorbet loaf -grape juice, mango, kiwi

My son asked a talmid of Rav Moshe Zt"l if he had to be matir neder when he went to his in-laws, who use way more products than we do. He was told no.

That's basic. Most people eat at their in-laws without hataras nadarim. I believe he would get a different psak if he asked about changing the minhagim in his own house.

Blended butternut veg soup
Low carb cream of chicken soup using zucchini
Chicken or turkey balls instead of matzo balls
Flavor meat with grated horseradish, wine, juice of orange.
Mango or pineapple sorbet to scoop

All recipes I listed now or before are using basic ingredients.
No potato starch. Only peeled veg. Only spices I use are salt, pepper, cinnamon, sugar

Yeah but do you really need to make applesauce in order to make fruit leather? I saw this done with mango where they just put the mango into the food processor and then rolled it out thinly on the baking sheet and baked it and it became fruit leather. Why cant the same be thing be done with apples? Just put it raw in the food processor then spread it on the baking sheet and bake and you will get fruit leather without the added step of cooking the apples first. You can probably do the same thing with pears if you eat them.

Seriously I just try to stick to basics. Whatever takes fastest to prepare, cooks quickly, and is the most filling. Anything else is a waste of my time. If it takes 3 hours to prepare and 3 min to eat, it's not on my menu.
I make sure to get the large onions, potatoes, carrots, etc. What's the point of peeling a dozen teeny tiny potatoes when I can peel two big ones and have the same amount of potato. It's a waste of time to deal with small produce.

You can make anything gourmet looking by filling
Veggies in avocado bowl
Cooked veggies in spaghetti squah bowl
Ground meat in zucchini boats or cups
Fruit salad in apple or cantaloupe bowl
Nuts or pom seeds in cored baked apple
Avocado salad in cucumber boats
Romaine lettuce wraps
Fill endive leaves

Salad with cubed avocado
Lettuce salad with fruits like mango

These are pretty good

Plantain Wraps

3 unripe plantains
1/3 cup water
1/3 cup oil
1 teaspoon salt

Preheat oven to 180/350.
Blend all together and spread on a lined baking sheet to form a large circle.

Bake for 15-20 min, until edges just start to brown.

Use like tortilla wraps...eggs, meat, avocado, chicken, pulled beef.

You can probably make pizza with them but haven't tried.

This Pesach I realised for the first time that you could easily peel red hot chili pepper with a peeler, it is as quick as peeling a (small) carrot and there you go, whatever you want tastes hot and spicy!
