Can I do it? My recipe calls for 1/2 cup of honey and 1 1/4 c of sugar. I’d rather use all honey. Can I and if yes, is it equal quantity?

Sure. I make Rebbetzin Kanievsky's challah based on the biography, which calls for 1.5 cups sugar total (using something for proofing) and I use just under 1 c. and the challah is bH good.

I do that recipe too. So you do just under 1 cup honey and no sugar except for proofing?

Yes. The consistency is bH fantastic, and it's not as sweet as other challos but still quite tasty.
