Cornish hens recipe ideas?

Any Pesach recipes for Cornish hens? Fewest spices the better. No garlic. Otherwise-Salt, coconut aminos, hot sauce, sugar, honey, wine, orange juice, lemon juice etc are all ok.
Any ideas?

No salt? I usually brush skin with olive oil and then I sprinkle with salt and pepper onion powder garlic powder and paprika (sometimes parsley too

Salt and olive oil are great, but not the rest. Sounds good, but thinking a sauce might compensate for lack of spices?

Season the hens all over (including under skin) with a paste of grated shallots or onion, salt and olive oil. Brush the outer skin with honey so it turns nice and brown when baked uncovered, even without paprika.

Vegetable Stuffing

2 tablespoons olive oil
2 Russet or Idaho potato, peeled and shredded
2 large carrots, peeled and shredded
1 small onion, peeled and shredded
kosher salt & black pepper
2 tablespoons potato starch

Heat oil in a large skillet. Add shredded vegetables and sauté for about 10 minutes. Season with salt and pepper. Once vegetables have cooled down, sprinkle with potato starch and mix well. Stuff.
