I love coconut bars like Bounty but dislike home made pesach cakes made with grated coconut, they are just dry and totally lack the taste of rich coconut.
Any tips to improve taste and texture? Where am I going wrong?

I don't know why Pesach time all the coconut they sell is dried out and gross. Not like that nice moist coconut in the bag I get during the year. I tried soaking it one year but it didn't help.
