I'm making Challahs as part of my Mishloach Manos and I'd like to send to a newly discovered cousin, who is Diabetic. I know there are different types of diabetes but he seems to avoid sugar completely.
Does anyone have a recipe for Challah without sugar? I've looked in Enlitened Kosher Cooking but the recipe in there does have sugar.

You can use the same recipe and just leave out the sugar. Or you can use a sugar substitute, Diabetisweet or Splenda. Just check the conversion instructions.

Why not include matza insead, or the kind of food she knows she can eat. If I were diabetic, I'd be nervous to eat someone's home cooking.

They probably shouldn't be eating matzah. But challah would be ok if it had some fat in it also, depending on the person's doctor's recommendation.
