Did you get it in the oven fast enough? Sounds like they may have been sitting too long between when you peeled them and when it got into the oven. The chemical reaction between the potatoes and the air they are exposed to makes them turn pink
ETA: there's nothing wrong with eating it. You can try broiling it a little to get the top darker
