I make the coffee Bundt cake in the bais Yaakov cookbook all the time without a mixer.

Check out this thread. Lots of no mixer cakes. I’ve made some of them a few times

Any cake that doesn't require beating the whites I make by hand.
It isn't always the most practical as I end up making a mess. Some recipes are a little harder to mix and my hand starts to hurt.

Regardless, whether you don't have a mixer or don't want to take it out, most standard cake recipes are ok being mixed by hand.
