Hi,
Any ideas on what to do with cooked chicken cutlets that I used in a soup? Maybe salad, fried in crumbs etc.?

I shred it and usually either put it in blintzes or use it in gnocchi

I do this with leftover chicken on the bone but as long as the cutlets are moist from the soup it shoudl work.
Fry a lot of onions and any vegetables you have - mushrooms, peppers, baby corn, snap peas, whatevers in your fridge, until soft. Add shredded or cut up chicken, salt, pepper and a small can of tomato sauce. Let cook for a little while and serve over rice.

Slice thin on the diagonal a serve over a salad with a drizzle of creamy dressing.
Cube and make individual chicken pot pies.
Saute an onion, add ketchup, brown sugar, vinegar and mustard to taste. Add shredded chicken to simmering sauce for about 5 minutes. Spoon over halved baguettes or kaiser rolls and serve.

Toss into a stir fry, and add a little teriyaki sauce. The veggies and sauce will keep the chicken from tasting dry.
Shred the chicken, mix it with salsa, and serve in corn tortillas.
Mince it finely in a food processor, and then treat it like tuna (add mayo and your favorite extras.) You can make delicious sandwiches that way.

I never heard of using chicken cutlets to make soup. But as long as it's moist chicken, chicken salad is good. You can do a chicken pot pie, or chicken and rice, chicken stir fry, chicken tacos. Anything really.

I make my soup from bones. The cost is almost as much, but I prefer not to waste.

How is the cost almost as much? Bones are a few dollars
And chicken on bone is alot more

3 pounds of bones for 1.99 each, so $6 unless I happen to get them on sale. For an 8 quart pot.
6 chicken legs are usually around $9.50 ($2.49 per lb for around 3.75 lbs, for an 8 quart pot). In my mind I still somehow think it's almost as much.
