Plain flax oil. Don't laugh. I love the taste of it in my salad.

I never cook with measurements. Just keep tasting until it's perfect for you.
Oil, vinegar, fresh garlic, salt, pepper, whatever fresh herbs I have on hand, and one whole very ripe avocado. Whiz in the food processor, or with a stick blender.
Add water or soy milk to make it thinner if you need to. This is SO creamy and decadent, and full of healthy fats. I like to use hazelnut oil for this, and apple cider vinegar "with the mother."
If you don't thin down the avocado dressing, it's wonderful spread on toast or matza. Good for raw veggie dip, too.
You can make "mock mayo" with oil, vinegar, and a small handful of raw cashews. Blend on the highest setting until everything is completely smooth. It may separate a little bit in the fridge, but just give it a quick stir before serving and it will be fine. Season with whatever you want.
Both dressings are really good in tuna or chicken salad.

how much olive oil and vinegar? can I use acv?
