I just made matza ball mixture to cook for Shabbos. I bought a new box of matza meal after Pesach. It's not KLP and not whole wheat, and the matza meal looks normal (I think?) but once I made teh mixture, it looks really brown.
What could be causing this?

It’s based on the matzah that’s used for the matzah meal. I find the mix boxes make the whitest balls because they use a very light matzah.

Is there anything to do now?
(I haven't cooked it yet, will it affect the taste?)
I don't get it though, because I've been buying boxes of matza meal (not the mixes) for forever and never had this before! I'm never brand-conscious, just buy whatever is available (and cheap). How can I avoid this next time?
