Bought the least expensive meat it’s called shabbos meat. How can I use it for pulled beef, would it work? Also is 1 piece enough for one long rectangle dough?

I think so, but for next time buy top rib or brisket.

cheap meat is great for pulled beef. Cook it low and slow and shred it with forks. For meat that just gets shredded and doused in sauce I prefer to spend as little as I can. I usually get what is called stew meat or cholent meant.
