French is also known as brick. It's a great quality chuck cut, good for slow roasting, similar to a brisket. It sits right alongside the brisket, on the edge of the chuck. It's well marbled like 2nd cut, but you get nicer slices.

Square cut is also a French, cut differently (probably closer to a 1st cut in texture).

2nd cut brisket is the most marblized part of the brisket. Very tasty even if the slices aren't as nice. Tender, even made in the oven.

They're all made the same way. Use your favorite roast beef seasonings and methods.
