Onion soup and onion rolls.
I just don't want to be left with everything on Erev Yom Tov. We're only making one meal at home, but since it's the 2nd night meal, I won't have time to cook on Yom Tov itself.

Yes sure. Soup freezes beautifully. Don’t over bake the rolls and warm them up well when ready to eat.

yes, if you're going to reheat them in the oven before serving.
