For the crepes:
1 1/4 c flour
1 1/4 c milk
(mix with fork/whisk)
Add 5 eggs - whisking to remove most lumps.
Spray non-stick pan with cooking spray (pam).
Using ladle, make thin crepes, flipping when edges start curling up.
fry briefly on second side.
Yield - 8 crepes
Filling:
1 lb farmer cheese
1/3 c sugar (or less - to your taste).
1 tsp vanilla or vanilla sugar
divide cheese filling into 8 - about one Tablespoon per crepe.
place cheese filling near edge of crepe. Make one fold of crepe.
Fold the sides in. Continue rolling up the crepe.
Enjoy!
PS I use 8 packets of Splenda in this recipe instead of sugar.

1.5 lb farmer
8 oz cream cheese
8 oz sour cream
3 vanilla sugar
1/2 c sugar
1/2 c confectioners sugar
If too stiff add 1/3 c milk

This is a recipe for the cheese filling only.
I think you would need a crepe recipe - that is double mine.
Using about 2 1/2 cups - 3 cups flour to be make 16 - 20 crepes for this filling recipe.
