What should I do with all these carrots??

I have 4(!) bags of carrots sitting in my fridge. I'd love to use them all, if I can find some good recipes or ideas. Please help me!

Cut up all the carrots you don't end up using and freeze it. I do that with all my vegetables that I see I don't need at the moment. I take it out when I make a soup or add it to vegetables that I frying or grill. Super handy and you end up sparing time when you use it

Beis yaakov cookbook carrot souflee. I use 4 lb of carrots instead of 1 lb, and subsitute unsweetened applesauce for the oil. Bake in a 9x13. Delish!! Always a crowd pleaser

Roasted carrots

Glazed carrots

Carrot cake

Use 2 packages to make a creamy blended carrot soup. Delicious. And such a vibrant color.

Chunk another package along with potatoes, onions and garlic to lay out underneath a roast for Yom Tov.

If ambitious, & have the time, could order ground fish,& make homemade gefilte fish.
Some of the carrots are grated into the fish, & many sliced up into the boiled water the fish is cooked in

I use tons of carrots in my chicken soup. It makes it sweet.

You can shred or dice them and freeze for use in veggie soups.

I especially love the idea of peeling and chunking to freeze for later. I can't believe I never thought of that before!

Slice the carrots into French fry shapes, toss with a little oil, onion and garlic powder, salt, pepper, paprika, cayenne pepper if you want a little heat
Bake on greased cookie sheet (or mix it all on the cookie sheet and do less oil) for 15 min at 425, flip, sprinkle with ground almonds and bake another 10 min
