I'm baking chicken cutlets in the oven now. They're cooking on top of vegetables. Will the vegetables that are on the bottom of the chicken get cooked throughout too?

Definitely. Probably overcooked unless it’s carrots and potatoes.

Zuchinni and mushrooms. But it's directly under the chicken so I don't want it being raw

Should be fine. If the chicken is done before the veggies are just take the chicken out, put on a plate and continue to cook the veggies
