It keeps in the fridge for 2 weeks. So if you make it now you should still be able to use leftovers next week. Of course it's delicious eaten the day after it's made but if you have other things to make on Sunday, cross this one off your list today.

Is there a way to make a crust without margarine if the pie crust can't freeze?

Made mine on Sunday. Freezer is just fine but I you are first making it now, I'd leave it in the fridge.

I’ve frozen those in a pie crust, by turning around the plastic cover, and covering it. Defrost right before serving.

On a slighty different note is it too early to saute veggies for quiche and lasagna? I would bake them on Sunday but I would just like to get this part out of the way.

I'm making it Sunday or possibly even Monday in my milchic crock pot (on a timer). It takes longer to cook, but they need a lot less babysitting and come out with a beautifully creamy texture.
