Reverse sear cowboy steak for medium well or well done

Does anyone know how Long to bake and what internal temp want for medium well or well done? The recipe gives instructions just for medium rare. The technique is bake till desired temp before yt, and then sear for 2 minutes on each side before serving

I sear before shabbos, then bake of 250 for an hour on shabbos and it comes out medium- medium rare. I would say bake it for an hour and change before YT and then sear and serve.

These are cowboy steaks. The recipe said 1-2 hrs on 225 for medium rare... it’s gonna be a lot more for medium well or well done. Do I just go by internal temp? Google is telling me 155-165 for medium well

Yes, I make a cowboy steak every Friday night. 2 hours on 225 will be very very overdone. The longest I would say to do is 1.5 hours. My family likes it medium rare to medium and an hour is perfect. I bake on 250.
