Why do you have to watch for cholesterol in eggs? There’s been repeated research about the fact that cholesterol in food has very little effect on actual cholesterol levels because the liver makes up fit it when you don’t eat it.

Mashed Cauliflower is really yummy to replace mash potato
Boil, drain well, blend, salt, pepper, enjoy with any protein

I like making flax bread in the microwave
Very filling

You can blend/crush 1.5 pounds of red ripe tomatoes. Sauté 3 minced garlic cloves for just a minute so it doesn't burn (optional red pepper flakes),. Add the crushed tomatoes and 1/2 tsp oregano. Season with salt to taste, tasting as you add, until the sauce is flavorful. Simmer for 10 minutes, until it thickens slightly.

Please do your research
Cholesterol does not come from fat, oil, eggs
It comes from sugar
Also, if you are reducing your sugar, you need a fuel source and that would be fat
And remember THERE IS NO ESSENTIAL CARBOHYDRATE - there is protein- which builds and repairs, and ESSENTIAL fatty acids - which can be a fuel source
