Any ideas of healthy sides I can serve weekday dinners with chicken etc? I've been doing cut up vegetables, quinoa, and roasted potatoes but need more ideas. TIA!

Sauté sliced mushrooms with garlic. Add baby spinach and halved cherry tomatoes for just 2 minutes until wilted. Season well with salt and pepper to taste.

A fresh salad at every dinner. That’s what my mom served. In addition to lots of cooked vegetables. We had meat, chicken or fresh fish every day. I didn’t even know how to make rice or a baked potato because she never served much starch. And we loved it because she was such an amazing cook!

I make carrot fries fairly frequently. Yum!
Slice carrots evenly, toss with some evoo, garlic powder, salt, pepper, and fresh minced or dried parsley. Spread on a baking sheet and roast at 425 F for 15 minutes, then flip. Might also work to roast on a wire rack to avoid flipping.

I do this with butternut squash, except I do paprika instead of parsley.
other ideas:
Saute some onions in a pan. Add sliced zucchini and cut up tomatoes (ripe ones) or canned tomatoes + salt, pepper and garlic powder. cover and cook until zucchini is softened.
You can make broccoli cauliflower quiche or spinach quiche but bake it in a round pan without a crust.

Stir fry snap peas are good. Sauté crushed garlic in some olive oil, add the snappeas, some spices, soy sauce and a little honey and stir fry it. You can also add some other veggies to it- like sliced zucchini or sliced mushrooms or red pepper strips. Don’t overcrowd the pan you don’t want it to get mushy.
