Someone gave me kaffir lime leaves from their garden a month or so ago. I put them in a pocket in the baby's diaper bag and totally forgot about them until the other day. They seem to have dried although that's not how I would usually dry leaves for cooking. Some of them have darker spots but they smell fine. Also, I've only ever preserved kaffir lime leaves by freezing, never drying.

Would you still use these in cooking?

Sounds fine to me. Remember they’re kind of inedible so using an herb bag or cheeseclosth isn’t a bad idea.

Lol. The person who gave it to me cooks a lot of kinds of food. I just put it into curries. Tastes really nice!

I wish I had some! I have to go to Jerusalem to get them, and lemongrass. You can't cook Yom Ka Gai without it.

Do you think they sell them frozen in asian stores? One thing I miss is green curry paste.

Whatfor where are you located that a neighbor can grow that?

If they are dried properly and not moldy, they should be fine.
Just asking out of curiosity - could one use other citrus leaves as a substitute for kaffir lime?
We make tea from lemon-, orange- and grapefruit leaves and they all taste very similar (and are probably easier to come by in most places).
