I am always looking for more vegetable side dishes to replace all the kugels I grew up with. can anyone share their favorite recipes of healthy vegetable sides?

Roasted broccoli
Roasted cauliflower
Roasted squash medley
String beans sauteed with mushrooms, peppers, onion
Stir fry
Lately, I've been using riced cauliflower. I sauteed onions mushrooms, garlic, lots of spices with the riced cauliflower. It gives a nice orzo feel.

If I need a sweet and kugelly feel, I'll make apple crumble with oats, cinnamon, honey and a little oil. Layered with lots of sliced apples and cinnamon.
Or I use peaches, frozen berries.

Roasted mini peppers
Frozen sugar snap peas with diced sweet potato, peppers, onions, mushrooms, baby corn. Spices, soy sauce, honey.
Any frozen veggie. Broccoli, cauliflower…
Green beans
Quinoa
Corn salad
Wild rice butternut squash salad
Cooked veggies - I do zucchini’s, peppers, red onion, peppers, mushrooms, carrots …whatever I have. Spice. Oil. Bake uncovered.
Cauliflower rice

Dessert: baked apples with cinnamon. Cotlland is best. No sugar necessary.

I make these almost every week instead of potato kugel and other kugels.

Corn Salad
Israeli Salad
Cesar Salad
Spinach Pancakes
potato salad with lots of vegetable's like peppers, scallions, pickles, carrots
Corn on the Cob for Friday afternoon
Sweet Potatoes Chips
Roasted Zucchini, Yellow Squash, Carrots, Broccoli, Cauliflower

I usually make

Roasted cauliflower or broccoli
Roasted rainbow carrots (I usually just salt, pepper and drizzle a little honey. The carrots have natural sweetness)
Green beans (sometimes topped with crispy sautéed mushrooms and shallots)
Sweet potato slices baked and topped with honey and walnuts
Artichokes
Ratatouille

Our most recent is blackening whole eggplant and skinning, draining and then adding diced celery, red peppers, olive oil and shallots. Salt and pepper to taste. We shred the eggplant with a fork because we like the texture better than purée. Really you could add what you want. It’s all about contrasts. Tastes even better a few days later. Cook early for Shabbat is a bonus.

1 red pepper per 1-2 zuchinni. Broil red pepper, turning occasionally till all sides are blistered and charred. Let cool in sealed bag. Remove skin, stem, and seeds and slice thin. Saute zoodles in a little olive oil with basil and garlic cubes. Add peppers and salt and pepper to taste.

Asian green beans- Saute green beans in a little toasted sesame oil. Add crushed garlic and ginger and cook a few more minutes. Add soy sauce and a bit of honey and cook another few minutes.
