Non-oily Meatballs?

Any tips for making meatballs that aren't oily? I use lean ground beef, but my sauce always has a layer of orange on top!

I bake the meatballs first and then drain off the fat and then cook them in the sauce second.

This. Or sometimes I'll brown them on the stovetop and then drain off the fat... same idea.

Make them a day ahead of when you want to serve them, refrigerate overnight so the fat can congeal on top and then skim it off before you warm it up.

This is the most effective. Just make sure to transfer to container when it's still berry warm otherwise the fat gets stuck mixed in. The sauce as you pour instead of rising to the top of the container

It sounds like your ground beef has a lot of fat and trimmings added by the butcher. Ask them for a leaner grind.

I use extra lean ground beef.
I also bake them to allow the fat to run off.

Try the mixed grind (beef and chicken). I don’t find them to be greasy like that.

Thank you everyone! Since I usually make my dinners the same day that we eat them, I will try browning them in my oven! (No time to refrigerate and skim...)
