Vered Hagalil parve chocolate gets quite liquid if heated properly. I've used it for glazing cakes.

It's hard, since melty chocolates are not very firm at room tempurature, leaving you with a sticky, drippy finished product. Unless you plan to serve right from the freezer? If so, I would I would use Oppenheimer choc chips, and add oil to the pot of chips as it melts until it is liquidy enough. That is, if you want Pareve.

I have a pastry chef product from a baking supplier. MElts beautifully and dries smooth dry and pretty. It looks like what you need. I bought way too much. ( You have to buy a minimum of 5 KG.)
Pm me if you want. I'm in Yerushalayim.
These are 2 links about the product.

I like to use shmerling chocolate. It's known as good quality chocolate. Sold everywhere.
I never compared it's liquidy with other brands
