Interesting observation! I've actually lived in both Israel and the US. I agree with you that Israeli produce is superior. But I've never really been one to go for plain raw veggies, even when we lived there. I like them roasted, in salad etc... I actually read that eating veggies with some fat helps us absorb the vitamins better, so maybe there's something to my way!

I do at least one veggie at both lunch and dinner. I like salads. You can chop up a bunch of veggies (tomatoes, cucumbers, peppers, etc) every few days and then at meal time just put them on some lettuce and add dressing. ta-da- side salad.

I also often just take a bag of frozen veggies (broccoli, green beans, anything really) put them on a pan and roast them in the oven.

I also like baby carrots or carrot sticks dipped in dressing, salsa, or brown mustard.

I make wraps with tuna or cheese & veggies- broccoli & melted cheese in a low-carb wrap or tuna and fresh veggies.

If healthy food makes you want to "throw up" then I think you need to consult with a nutritionist to completely retrain the way you eat -- one recipe for salad isn't going to fix that.

There are specialists who deal in food aversions, usually for kids, but occasionally for adults too.

I like slicing veggies in different ways, so they taste good to me.

*Carrot and cucumber spears are fun to snack on. So's celery.
*Roasted peppers are delicious.
*Cubed sweet potatoes roasted - yum!
*Whole large portabello mushrooms seared with salt and pepper are the best veggie burgers.
*Thin sliced onions go well in many sandwiches, or just plain.
*I like buying the Tinkerbell peppers and cutting them into flower shapes. My kids also snack on them like strawberries.
*Lettuce, thinly sliced and left to sit for a half hour, tastes sweet.
*"Zebra tomatoes," or any homegrown tomatoes, are the best.
*Fresh pumpkin can be sliced and eaten like an apple.

Lemon on sliced dark green leafies makes them a lot easier to eat.
