I have a recipe for peach crumble that I would like to try for shabbos. I have tons of nectarines that I got from a food box. Can I use them instead?

Ofc especially if they're ripe - take them out of fridge and let them get overripe. Nectarines are a little more tart but I prefer them to peaches and always use them. You can use the skin (more texture) or peel it off

I have a peach pie that I have made with nectarines, plums, grapes, and cherries with delicious results.
I'm gonna post it sometime, I just have to get my act together for it.

Of course you can and nectarines aren't inherently less sweet than peaches. I just ate a peach that wasn't as sweet as some and I generally prefer white nectarines because they are sweeter than peaches.
But cobblers - as posted - can be made with any kind of fruit with adjustments. I think peach cobbler is more famous because cobbler is a Southern dessert and peaches are a ubiquitous fruit in the South especially in Georgia which is the peach tree state. I think nectarines became available fairly recently.
