Anything he likes to eat. Maybe just set the table more formally than you usually do, nicer dishes, no disposables. You can always bake something quick and serve it for dessert. My weekday meals are pretty basic so if I serve more than one course dh will notice. If I put a bottle of wine and wine glasses on the table in middle of the week he’d wonder if I’m confused which day it is, but maybe your dh would like that.

you can make a delicious vegetable soup and puree it so its nice and smooth
plate everything nicely with fresh bread and a salad
chicken on the bone is fancy! make a yummy roast chicken with rice or potatoes and brownies for dessert

Set the table real nice. Shabbos dishes, table cloth etc. if you have a formal dining room that’s usually used for Shabbos have the dinner there. That in it of itself makes supper into a siyum seuda.
You can add another course, soup or an appetizer depending on what you have in the house. An appetizer can be anything that’s a small Portion, salad puff pastry with last nights leftover chicken sautéed with onion, fresh fruit etc.
