I make a roasted vegetable lasagna I found the recipe on google and changed it up a little.
Basically roast vegetables and then make a cheese sauce (butter, flour, milk, cheese) then layer lasagna sheets, some veg, more lasagna, more veg, cheese sauce, lasagna, cheese sauce and if you want extra cheesey add shredded cheese on top.
It’s really good and not too heavy.

To answer the original question (not sure if it's relevant to anyone anymore) we don't have access to any kind of cheese besides mozzarella, but we have milk and ricotta is very easy to make from milk. We do it all the time to make lasagna. You can Google a recipe but basically heat milk and a pinch of salt almost to a boil, add about 2 tbsp lemon juice per quart of milk and stir until it separates. Strain out the whey and there's your ricotta cheese.
