Does anyone have a recipe for cheese blintzes with out farmers cheese?

Classic recipe
2 eggs
1 cup flour
1 cup milk
1/4 cup sugar
1 tbsp vanilla sugar
1/3 cup oil
Tsp salt
Mix well.

I think she was referring to the filling.
I've never known what farmer cheese is. Here in Israel I make them using gvina levana, white cheese. It seems to work very nicely.

You can use cottage cheese instead.
If you don't want that either, I'm assuming there is a yogurt/ sour cream filling recipe out there, but I don't have it.

This recipe from betweencarpools is delicious, but it might be too sweet for what you want. Be aware it makes loads of the filling. When I made it for shavuos, I was able to make cheesecakes with the leftover filling.
