Caprese salad? For almost no prep at all, you can just mix cherry tomatoes, small ball fresh mozzarella (ciliegine), and basil leaves. Drizzle with a balsamic glaze (Tuscanini makes a nice one).

I would do regular romaine lettuce with feta cheese on top (cherry tomatoes, croutons and Ceasars dressing)

Oish thank you everyone, but I mean no prep at all!!

I am preparing and hosting this 7b alone and there's a limit to what I can do lol.

The only idea that sounds possible is plating Caesar salad, as I will have some help the day of.

Has anyone ever done fruit skewers and how did they come out?

Salad is waaaaaaaaaay easier than fruit skewers. You don't make the salad. You go around the table with the lettuce and plunk some on each plate. Then go around the table with the grape tomatoes and deposit a few on each plate. Then repeat with the croutons and/or feta cheese. You can prepare dressing in mini dipping plates at each setting, or drizzle dressing over the plate about an hour before your guests arrive.

Assuming you have a milchig blender, I think the easiest no-prep appetizer is strawberry soup. You can blend and freeze ahead of time. Take it out of the freezer that morning and let it defrost until it's a consistency you can mix (can be a bit slushy). Then all you have to do is ladle into nice cups and put on the tables.

Definitely either salad or strawberry soup, which you can blend and then just pour into bowls.

Anyone have a recipe for strawberry soup?

The reason I'm hesitating on the salad is because it was supposed to be one of the dishes served. Can't Believe It
This is being buffet style bagels/salad/soup/ice coffee event.

You can make a cheating gazpacho with premade israeli salad and tomato juice. If you have a food processor regular gazpacho takes 10 minutes. The longer it sits the better it tastes. Its very refreshing.
