Slightly fancy supper

A normal supper that I'd make would be under $10 (plus basic spices and stuff that I always have) for 3 portions. It takes up to an hour in total, including about 20 minutes of active prep time.

I'm looking for ideas that are just a bit fancier for when I have a little longer to prepare, and want to spend a little more. The meal would have to involve less than an hour of active prep time and cost $25 or less for 3 portions. Must include a veggie, starch, and protein. (No fish) Should all be on the healthy side.

Other guidelines: It's good if it's both kid- and adult-friendly, but I can work around that. Also, we don't eat enough to have multiple courses-so for example, the vegetable can be a soup, salad, or cooked side, but we don't need more than one of those. I'm looking for full meals that would work together. Assume that anything beyond super basic spices, oil, etc, would have to be purchased using the $25 budget-so if it needs a special sauce that costs $6, there's only $19 less. I have no problem with the meal costing only $5 and taking 10 minutes to prep, I just gave the max above. I don't need exact recipes for cooking (I do if it involves baking), so it's fine if you don't know the measurements for your go-to meal. Milchigs or fleishigs are both fine. I prefer not to have to prepare anything the day before.

Well, that's all I can think of for the rules!

pepper steak with couscous is delicious and easy to make. slightly more expensive but definitely in your budget.
I also really like eggplant parmesan maybe with a mushroom barley soup?

Anything can be upgraded by adding some candles and a nice tablecloth, maybe some fancy napkins.

Good idea! I actually have pepper steak. But we don't like it with peppers. Any idea for veggies? To cook with the meat, or something on the side.

Grilled chicken cutlets, light or dark meat. Best when made fresh and the possibilities are endless- rubs, marinades, crumbs, etc. Also go with almost any side dish - any variety of rice, veggies etc

Beef n broccoli recipe from BY cookbook is similar to pepper steak without the peppers. Its delicious and the veggies are part of the dish. Serve with mashed potatoes/rice/pasta

You can cook the meat with mushrooms, bamboo shoots, baby corn - my favorite pepper steak combination (I cook the meat with peppers but dont eat the actual peppers lol)

You can upgrade pasta with crumbs or saute'ed cabbage.
Orzo with pastrami & mushrooms
Deli roll
Homemade potato knishes with ready rolled out sheet of dough.
Baked apple covered with flaky square or baked apple rolled in nuts
Pasta shells with pastrami or spinach cheese
Lasagne roll ups with spinach
Grilled chicken salad with checked salad bags
Chinese chicken with broccoli ready checked frozen bags
Minute steak
Club steak with balsamic vinegar & shallots
Mock liver
Cream of chicken soup
Fruit compote
Greens beans with pastrami
Broccoli kugel
Veg turnovers
Cheese blintzes or with any other filling
Saute'ed shredded soup chicken with carrot/zucchini in a wrap
Sloppy Joe's with veggies in a pitas
Schwarma spread, with pita, falafel balls, hummus, salad, dips, fries
Taco spread, taco shells with pulled brisket or ground meat with diff toppings, avocado, corn, tomatoes, crunchy onions etc
Chicken wontons over salad
