Help with kishke

How do caterers do it? Whenever I am at a simcha and they serve the cholent, there is always a nice round slice of kishke on top.
My kishke always falls apart into a mush.

I buy meamart kishke and put it in parchment paper and place it right in top of the cholent in the crockpot right before shabbos. When I serve it, it's just a mush. Is it the recipe they use? Or should I bake it first?

Keep it in the mealmart wrapping/tubing

Yes, I'm pretty sure they don't cook it in the cholent. They're making a lot, so it's not like they'll save pots and pans by adding it to the cholent anyway

Some kishkes fall apart and some don’t. I like a&b, it holds really nicely. The ones that come in clear plastic fall apart, in my experience.
When I use a&b, I make small balls of it and place it on top of the cholent. It doesn’t dissolve and disintegrate like the other brands do

It needs to sit on top of the water, not submerged in the liquid - any part in the liquid will mush

I usually put it on top of the cholent, not submerged.
Maybe I'll see if they sell a &B kishke in my neighborhood. Meanwhile I'll bake the one I have now.
