I also defrost a large casserole type of dish because otherwise you might get uneven heating because the middle will be frozen and the edges burned.
If the lasagna is safely defrosted then it is going to cook evenly
It is probably going to dry out so using extra sauce will help it remain moist.
What is meat lasagna? I have heard of vegetable lasagna and mushroom lasagna but lasagna by definition requires cheese because otherwise it is really just a form of ziti.

Layering meat and veggie mixture in between layers of the pasta called lasagna. Ziti is round pipes. Lasagna is long flat sheets. It’s delicious!

I know what lasagna noodles are but honestly only in the frum world would a lasagna without any cheese be called lasagna.
No one would recognize that as a lasagna - it is some form of layered pasta dish.
There are recipes for vegan lasagnas which use vegetable based cheese products.
I am not passing judgment on whether it tastes good but only that cheese is pretty much a standard ingredient for lasagna. It is as if one were making matzo balls with Ritz crackers and calling them matzo balls.
